Ingredients for 2-3 people Servings

  • 1 1/2 cup
    Shrimp, peeled and deveined
  • 1 Tbsp
    Lemon juice
  • 1 tsp
    Olive oil
  • 1/2 tsp
    Cumin
  • 1/2 tsp
    Coriander
  • 1/2 tsp
    Dill, dry
  • 1 tsp
    Chili powder
  • 1 cup
    Chickpeas, cooked
  • 2 cloves
    Garlic, minced
  • 2
    Cucumbers, chopped
  • 1
    Tomato, thinly chopped
  • 1 small
    Pepper
  • 1
    Scallion, chopped
  • 1/3 cup
    Herbs, chopped (basil, arugula, and parsley)
  • 1 Tbsp
    Olives, pitted
  • 1 Tsp
    Olive oil
  • 1 Tbsp
    Lemon juice
  • Salt and pepper to taste

Method

  1. Combine shrimp, lemon juice, olive oil, cumin, coriander, dill, and chili powder in a medium bowl. Cover and refrigerate for 15-20 minutes.
  2. In a large saucepan on medium heat, add the shrimp and saute for 10-15 minutes, or until the shrimp starts to brown.
  3. Drain the canned chickpeas and garlic and add to the saucepan. Cook for another 15 minutes.
  4. Build the salad with cucumbers, tomatoes, pepper, scallion, greens, and olives. Add in shrimp and chickpeas.
  5. Dress with olive oil, lemon juice, salt and pepper.
